Best Dinner Ever

I need to start this post with a giant apology. I have no pictures to accompany this to show you how awesome this dinner really was.

I had Tuesday off from work and while normally I would use a great day off to lay around, tan and catch up on trashy reality shows... (DVR is a lifesaver, it really takes the pressure off me trying to watch all these shows on my own.) I didn't do much of that on Tuesday

I figured out a couple of years ago that if I spend a day off wearing sweatpants I will accomplish nothing, I will be tempted to continue to wear them. But if I put on some jeans and a real shirt I am about to get motivated. So clearly I put on some jeans and a t-shirt and I got cracking.

Once I was in my "accomplish stuff clothes" I fought a all out war with dog and cat hair in my house. AND I WON! I vacuumed and dusted a lot.

While all of this crazy cleaning was going on I was cooking. I have a crock pot and if you don't have one...WHAT IS WRONG WITH YOU, YOU NEED ONE IMMEDIATELY!!... I was roasting a pork shoulder.

Instructions: Open pork shoulder and put into crock pot (preferably on a grate)
                    Add some water
                    Add salt and pepper
Cook until the house smells great
Shred up the pork when it is done and add BBQ sauce

When Patrick got home from work and was cleaning up I whipped up his favorite side dish homemade baked mac and cheese

Instructions: Cook macaroni until it is tender and put in a baking dish
Chuck a certain soft processed cheese up
Put a bunch of chucks of cheese in with the macaroni and add some milk
Stir and put in oven for 20 minutes
After 20 minutes remove from over and stir the cheese sauce until it is smooth
Top with some cheddar or some other type of cheese and add some pepper
Put it back in the oven until it is bubbly

Ok this was so good I created a drink to accompany this great food and I named it a Sweet Tequila!

Instructions: Half a glass of sweet tea
Top with sweet and sour mix
                    Splash of Tequila!

Nothing like some great food to make for a wonderful evening, sorry about no pictures, but maybe next time.

Bethany side note of the day: Since I neglected to add a Bethany side note of the day in my last post I am sure that many of you thought for a quick second that Bethany finally caved and started reading my blog. I wish I could say this happened, but alas no it just slipped my mind. Due to the oversight I will give you 2 Bethany notes today.. Enjoy

1. Bethany also loves to eat starch... potatoes of any type and rice-a-roni are pretty much her favorite foods.

2. Bethany never ever goes anywhere without a water bottle

Terrible Discoveries

I went to the grocery store yesterday to make my weekly rounds and pick up all we might need for the week, and I made a terrible discovery.

Now I am a old fashioned girl so I find the following things to be just too much... disgusting... and absolutely unneeded.

Does anybody really use any of these things on their ice cream because I for one am really grossed out. What a waste of time all of these are when you could always just top ice cream with chocolate sauce, whipped cream, (maybe some chopped nuts) and a cherry.

Just saying

Sick Day

So today I woke up feeling awful, I had a fever, sweats, and a serious headache for most of the day. I believe in my soul that there are several things you can learn about yourself when you get sick.

1. I believe you are not fully a adult until you had to consciously decide where you want to go to the doctor. After I graduated college and moved to Harrisonburg I got sick and needed to go to the doctor. I did not have any idea of where I should go since this is not where I am from. I asked my future husband, and some close friends where they go to the doctor I called a couple of those docs and none would take me so I had to just open the phone book and start calling.

Eventually I found a taker, a Dr. McNett has been my go to guy ever since.

2. When you are sick you pretty much turn into the sick kid you where when you were little. And you are going to want to have exactly what your parents gave you where you sick as a child. Some kids got chicken noodle soup, or broth, some kids got jello or pudding.

My parents gave me:

I didn't get either of these things today, because we didn't have them at the house. But Patrick took great care of me today. He is such a great husband.

Bethany side-note of the day: Bethany needs a little encouragement to come to our family reunion next month... let her know that she should be in attendance @bethanyfinn

Prepping for Summer

So my little group of friends has a couple of traditions and all of them are pretty good...
  • pedis and El Charro
  • the occasional cocktail party
  • helping each other move
  • tweeting during #glee
  • meeting up at Barnes and Noble for coffee
  • and BEACH TRIP!!!!!
For our second annual beach trip I have been assigned to look for good deals on hotels in the hot spots. (I looked for a good pictures of last years trip. No luck sorry)

Last year we stayed in a room that looked a little like this:

Needless to say one of our buddies came back with a small rash, and we later discovered the hotel has a bedbug problem. We fit 6 girls in this room and it was pretty cramp, 2 girls slept on the floor to make it even worse.

This year I would love it if we could stay in this room:

Clearly this is not likely to happen on our budget but we do have a couple things that are important to the decision making in picking a great hotel.
  • Heather will be 7 months pregnant when we go to the beach so we don't want to be too far away from anything.
  • We need a fridge to hold our juice boxes and other goodies
  • It would be sweet if we all get to sleep in a bed this year
  • We need a TV with cable... cause we love our reality shows
So obviously I have a big search ahead of me... oh yeah plus we are all poor and don't want to spend a lot of money.  Last year we had a blast, we lounged around, swam in the ocean, swam in the pool, walked the boardwalk and took in some local hot spots, and watched a lot of Jersey Shore. Basically we had a awesome weekend.

Bethany side note of the day: Bethany hates swimming and the beach mainly I believe because she wears glasses and doesn't like removing them and not being able to see. But when we were in Cancun she barely got in the water at all.

Man's Best Friend

Well there are few things that I would consider myself a outright expert in:
  • folding laundry
  • Sex in the City episode trivia
  • dog ownership
As previously discussed in my blog Patrick and I have a cute little pooch Flower. Now Flower is adorable, sweet, and fun to cuddle with. But I must say I am a little frustrated, when you watch TV you see dog with a lot of traits that my dog just doesn't possess.

Smart
Brave and Loyal
Spanish

None of these are traits that Flower possess, she just lays around all the time. I have absolutely no faith that Flower would rescue me from a well, teach my kids to read, or bring me tacos. (She stole a taco from Patrick once while he was eating it.)

Total Daily Activity
I want to teach her some cool tricks but I don't know how, any ideas?

Bethany side note of the day: Bethany's dog Daisy is really good and knows a bunch of tricks... I am jealous.
